Having been introduced to cranberries by the Native Americans, these tart red berries are an indispensable ingredient in my native New England’s cuisine – especially at Thanksgiving and Christmas. Here they are combined with white chocolate chips to make a superb holiday cookie!
½ cup butter or margarine, softened • ½ cup brown sugar • 2 large eggs • 1½ cups old-fashioned oats • 1½ cups flour • 1 teaspoon baking soda • ½ teaspoon salt • 1 6-ounce package of dried cranberries • ½ cup white chocolate chunks or chips
1. Preheat oven to 375 degrees F (190 degrees C). • 2. In a medium bowl, cream together the butter and sugar. • 3. Beat in the eggs one at a time. • 4. Combine the rolled oats, flour, whole wheat flour, baking soda and salt; gradually stir into the creamed mixture. • 5. Finally, stir in the cranberries, white chocolate chips and chocolate chips. • 6. Drop rounded spoonfuls onto the prepared cookie sheet. • 7. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. • 8. This makes about thirty mouth-watering cookies.
